Grown-up PB&J Toast

This recipe is inspired by the classic peanut butter and jelly sandwich we have all grown to love. Instead of using jelly, a fresh fruit medley is used to top your toast.

Serves: 1

2 slices of bread (whole grain or seeded loaf)
1 and 1/2 tablespoon of unsalted peanut butter or almond butter
1/2 ripe medium nectarine, diced
8-10 large blackberries, chopped
2 teaspoons honey
*optional to add a light sprinkle of cinnamon and sea salt
1. Toast the bread, and spread the nut butter on each slice of toast.
2. In a small bowl, mix the nectarines and blackberries. Spoon the fruit mixture on top of the toast.
3. Drizzle a teaspoon of honey on top of each slice of toast. Add a sprinkle of cinnamon and sea salt to enhance the flavor profile of this snack.
